Photographic Theory and Practise

I have asked to complete a module that my fellow students completed in their year 1, at Cambridge Regional College (where I completed year one of my FDA) we completed some alternative units and I am   keen to cover the work I missed.
However..... the project brief is not as comprehensive as I would like and am supposed to use photographic techniques demonstrated in  sessions delivered last year... should be interesting.
The images I need to produce have to be selected from a wider range of images covering the following headings:
Light, Time, Viewpoint and Focus with a free rein on the subject matter.. without any manipulation in photoshop.

LIGHT:

 Over exposed by 2 stops:                    28mm;F/14;1/250th sec; ISO 200; AV Priority; Spot Metering.

 Correct Exposure.                           28mm;F/14;1/500th sec; ISO 200; AV Priority; Spot Metering

    Image 3.
Under Exposed by 2 stops.             28mm;F/14/1/000th sec. ISO 200; AV Priority; Spot Metering


I had to pick up Han Wei (No. 2 Son) from East Midlands Parkway and these Chimneys always intrigue me... the exposures are interesting.. I like a mix of Correct and over exposed as the chimneys and sky are good in the correct exposure but the foreground is a little dark and could do with some lightening although not quite as much as in image 1. Normally I underexpose by one stop and then adjust in RAW. I think I may need to change my spot metering for evaluative metering as this may be more suited to landscape images.
